    Autumn brings us wild as well as cultivated mushrooms. Whereas only those who really know what they are looking should pick wild mushrooms, we are lucky that many varieties are now available commercially, especially at Farmers' Markets.

    From simple (on toast) to pies and ragout with pasta - here are some great mushroom ideas.

    Mushroom & Leek Risotto

    The great thing about risotto is you can add almost anything to them and have a great one pot dinner in about 20mins. This is a vegetarian risotto using mushrooms, leek, onion, pumpkin and zucchini but you could easily add bacon or pancetta or chicken if you want. Risottos really aren't hard to make ... they just need a bit of attention and stirring for about 15 minutes.

    Mushroom Ragout Pasta

    Autumn is the season for a variety of interesting mushrooms. This recipe uses King Brown (also know as King Oyster / Eryngii mushrooms) and fresh Shitake mushrooms and it's worth looking for them at your local market or greengrocer. However, you could substitute another "meaty" variety such as Portobello or Field mushrooms. Use a creamy, rather than a dry, feta for this recipe
