Eggs and other Easter Ideas
The humble egg has railed under a bad name as it has been accused of being the cause of high cholesterol levels. However, more recent nutritional advice advocates the inclusion of eggs in moderation in the diet as they offer a cheap and extensive range of healthy vitamins and minerals. So, an average of one egg a day is good!
If you are lucky enough to have a friend or neighbour with their own chooks, you can be sure they are being fed a healthy diet, which flows on to their eggs. Otherwise, look for free-range farm eggs at Farmers' Markets or good food stores. Often butchers will sell high quality eggs as well!
So for breakfast, what about poaching an egg and serving it with a tomato braise? The secret to poaching an egg well is in the freshness of the egg. Simply bring a small saucepan of water to the boil, add a few drops of vinegar (to set the white), place the egg into a cup and swirl the boiling water around in the pan. Carefully add the egg and immediately reduce the heat to low. Cover the pan and cook very gently (or removed from heat) for about 1 minute for soft or 2 minutes for firm yolks. Easy!

Or a fab omelette - beat 2 eggs in a bowl with 1-2Tb cold water. Chop 1 shallot, halve 4 cherry tomatoes, cube 40g feta, chop parsley, basil and dill to give 2 Tb herbs. Heat a small frying pan with 1ts butter and 1ts oil till quite hot, add egg mix, turn heat down to medium, and sprinkle prepared vegetables, feta and herbs over the top. Heat the griller and as omelette just sets, place under the griller to finish cooking /browning on top. Serve immediately with a grinding of black pepper on top.

Or zucchini & leek frittata ... spinach & haloumi souffle ... limitless really!
