SUMMER BERRIES
Using fresh seasonal produce means that even the simplest preparation will yield a big impact. Forget complicated, fussy recipes – here are a few ideas for quick desserts which make the most of summer berries and free up more time for you to create shared memories with friends and family. The best part about these recipes is that they can be made ahead of time so when your guests arrive you won’t be stuck in the kitchen.
Brown sugar yoghurt with strawberries
1. Take 1kg of natural unsweetened greek yoghurt and place in a round glass bowl.
2. Cover the yoghurt in a layer of brown sugar (about half a centimetre thick). Set aside for a least 30 minutes covered in the fridge or until the brown sugar melts into a golden layer above the yoghurt.
3. When you are ready to serve, place the yoghurt on a round platter and scatter 2 punnets of washed, unhulled strawberries around the bowl of yoghurt.
4. Leaving the stalks to use as handles, your guests can dip strawberries into the yoghurt through the sugar layer.
So simple and no cutlery and crockery to wash up afterwards!
Icecream
Give good quality vanilla icecream a lift by serving with blackberries that have been heated with a little sugar, lemon zest and lemon juice.
Strawberry ice ring
If you are entertaining on a hot summer evening and plan to serve a punch you can add impact by making a frozen strawberry ring.
- wash, hull and quarter 3 punnets of strawberries.
- Fill a round cake ring with the strawberries and cover with water or a clear juice like apple juice and then
- freeze until solid.
