Lemon Delicious Pudding

Description: This is an old favourite - particularly good with lemons, such as Meyers, in season. Try to keep the flavour tart rather than too sweet - you can always dust it with icing sugar if it needs a little extra sweetness once baked.

ingredients

Fresh

  • 2 lemons
  • 3 eggs
  • 475 ml milk

Pantry

  • 60 g butter
  • 375 g sugar
  • 3 Tb SR flour

method

1 Preheat oven to 180° and separate egg yolks from whites.
2 Cream butter and sugar with zest of 1 and juice of 2 lemons till white.
3 Add egg yolks. Add flour and milk to make a smooth batter.
4 Whisk egg whites till soft peaks form and fold gently into batter.
5 Pour into greased tin or ovenproof bowl and bake at 180°C for 1 hour in a bain marie

tips

Serve with a scoop of ice cream or a spoonful of thick cream. Also delicious if made with limes instead of lemons.
