method1. Grease porcelain basin (3pint capacity) with butter.2. Sift dry ingredients into basin (flour, spices, salt & bicarb). 3. Cut softened butter into cubes and rub into dry mix, then mix in breadcrumbs. 4. In a separate bowl, mix raisins, peel, almonds, grated apple (which has been peeled & cored), rind & juice of 1/2 orange. 5. In another bowl, mix brown sugar, sultanas & currants together and add to raisin mix. 6. All fruit mix to dry mix and combine. 7. Beat 3 eggs to a froth, mix in the brandy and then add to other ingredients and mix well with a spoon. 8. Pour pudding mix into the basin - don't fill to the top so as to allow for rising. 9. Cover with a circle of greased proof paper, then alfoil and then secure with string. 10. Put in a boiler and fill with water until the water is half way up the basin. 11. Place lid on the boiler and boil for 6 hours. During the cooking, keep adding water to maintain the water level. 12. When cooked, remove from boiler, remove foil and paper and allow surface to dry (30mins). Then cover with a clean circle of greased proof paper & foil and store in the fridge. 13. Boil for a further 2-3 hours before serving (or you can remove foil, cover with gladwrap and heat in the microwave for 12 mins). 14. To light the pudding, heat some brandy and pour over pudding just before you serve. tipsDO NOT put coins in the pudding before you cook the pudding. Add them just before you serving.On Christmas day, you don't have to re-boil the pudding for 2-3 hours. Instead you can heat it in the microwave for ~12 mins. |
