method1 To make the marinade, mix the olive oil, orange juice, star anise and cinnamon in a dish and add the quail. Make sure the quail is well coated and leave to marinate for at least 30 minutes (preferably overnight if you can).2 Heat the BBQ to medium (the chargrills are the best) 3 Grill quail for 8 minutes on BBQ, turning every 2 mins. You can tell that it's cooked by inserting a knife and the juices run clear. TO MAKE THE SALAD 4 Remove the peel from the orange and remove the segments - do this by running your knife down the membranes of each segment. If you find this tricky, just slice or dice instead. 5 Prepare a simple salad of rocket leaves and orange segments, drizzle with olive oil and balsamic vinegar and sprinkle with sea salt. TO SERVE Arrange the quail and salad on a platter. tipsYou can buy boned quail from most poultry or butcher shops- and at some supermarkets. If you can't find quail, you can use chicken thigh fillets instead.To bone and butterfly the quail yourself: Lay the quail breast side down and cut along both sides of the backbone with a knife or poultry scissors. Remove the backbone and then open out the quail and lay it flat ready for the marinade. |
