method1 Peel and chop pumpkin into cubes. Boil pumpkin until tender. Cook pasta in a large pot of boiling water till just tender. Drain and return to same pot3 Saute onion, till soft. Cut bacon into strips, add to pan and cook until crispy. Add pumpkin cubes 4 Stir over heat for 1 minute. Add cream and heat through. Add pumpkin mix and spinach to pasta. Stir to combine and spinach is wilted 5 Serve with black cracked pepper and shaved parmesan tipsKids will love it.As an alternative to the cream, you could substitute 200g ricotta mixed with 100ml milk. |
