Pumpkin Bacon Penne

ingredients

Fresh

  • 500 g butternut pumpkin
  • 1 brn onion
  • 4 bacon rashers
  • 300ml cream
  • 120g baby spinach

Pantry

  • 375g penne pasta

method

1 Peel and chop pumpkin into cubes. Boil pumpkin until tender. Cook pasta in a large pot of boiling water till just tender. Drain and return to same pot
3 Saute onion, till soft. Cut bacon into strips, add to pan and cook until crispy.  Add pumpkin cubes
4 Stir over heat for 1 minute. Add cream and heat through. Add pumpkin mix and spinach to pasta. Stir to combine and spinach is wilted
5 Serve with black cracked pepper and shaved parmesan

tips

Kids will love it.
As an alternative to the cream, you could substitute 200g ricotta mixed with 100ml milk.
