method1 Peel a long strip of orange rind2 Bring caster sugar, red wine, water, orange rind, cinnamon stick and cloves to a gentle boil. 3 Meanwhile, peel the pears thinly, leaving the stalk intact if possible 4 Immerse the pears into the saucepan with the syrup, so they fit together standing up 5 Simmer gently for about 10-15 minutes until pears are soft 6 Remove pears from syrup and place in serving bowl. Bring syrup to the boil and reduce to about half (or desired consistency). Pour the syrup over the pears and serve warm or at room temperature. tipsBeurre Bosc pears are perfect for this recipe, but William or Corella pears work too - they do need a little longer cooking though. |
