Description: This is a really soft 'gooey' pudding - but is absolutely scrumptious. And it's gluten-free so can be enjoyed by those usually denied such pudding delights.

method1 Preheat oven to 120°2 Melt the butter and the chocolate together in a bowl over simmering water 3 Beat the eggs and sugar together really well - until they are quite thick and fluffy. 4 Add hazelnut meal and fold through 5 Pour into a baking paper lined spring form tin - approx 23 cm diameter. 6 Bake in the slow oven for 40- 60 minutes - it should be firm on the edges, but still quite 'mushy' in the middle 7 Remove from oven and leave stand for at least 10 minutes. This can either be served warm - very carefully as the middle will still be quite soft and difficult to remove from the pan - or let to stand till cold and it will firm up a little. 8 Serve with thick cream or vanilla ice cream and berries on the side tipsUse the best quality dark chocolate you can find - and a good unsalted butter. |
