ingredients

Fresh

  • 500 ml milk
  • 300 ml cream
  • 2 strips orange rind
  • 2 egg yolks

Pantry

  • 110 g medium grain rice
  • 100g caster sugar
  • 1 cinnamon stick
  • 1 vanilla bean

method

1 Preheat oven 160°. Combine milk, cream, rice, sugar, cinnamon, vanilla bean and seeds, and orange rind in a saucepan. Cook over medium heat, stirring occasionally until it reaches a simmer.
2 Remove from heat, set aside for 15 minutes for flavours to infuse
3 Remove and discard the cinnamon stick, orange rind and vanilla bean. Add egg yolks and stir to combine
4 Pour rice mixture into 1 litre capacity oven-proof dish, bake for 40 minutes, remove from oven and leave to stand for 10 minutes before serving.

tips

Creamy home-cooked comfort food - but if you prefer your rice grains to remain al dente, use arborio rice.
