Description: Here's a cafe style cake which is easy to make and always impresses! It takes an hour to boil the oranges and to cook the cake but the rest of the prep happens in a few minutes. It can be made a day in advance.

method1. Place whole oranges in a saucepan with enough water to cover. Simmer for 1 hour or until the oranges are completely tender. (see tip). Cut the oranges in half, remove the seeds and puree the flesh and peel.2. Preheat the oven to 180° and butter, flour and line 2 x 20cm springform tins. 3. Add eggs and sugar in a bowl and beat until pale and thick. 4. Combine the baking powder and almond meal, and fold into the eggs. Finally fold in the orange puree and mix well. 5. Pour into the two tins and bake for 60 mins or until skewer comes out clean. Turn the cakes out on a rack to cool. 6. To make the lime mascarpone, put mascarpone, lime zest and some of the lime juice and sugar in a bowl and stir to combine. Adjust the lime juice and sugar as necessary. To serve: Cut the cake into wedges and serve with generous spoonful of lime mascarpone. tipsWhen boiling the oranges - change the water twice to ensure the skins don't become bitter.You can buy almond meal or else make your own by blending up whole almonds. If you do your own the cake will probably have more texture as it's hard to make really fine meal. You can freeze this cake - so eat one now and enjoy the other later. |
