Zucchini Ribbon Salad

ingredients

Fresh

  • 2 young zucchini
  • 1 lime

Pantry

  • 2ts Ponzu sauce
  • 1ts fish sauce
  • 1ts caster sugar

method

1 Combine Ponzu sauce, fish sauce, caster sugar and juice of lime (approx 2 ts) in a small bowl
2 Wash zucchini and slice with a vegetable peeler lengthways to make 'ribbons'
3 Dress zucchini with sauce, taste and season with a little salt if required. Leave to stand for 10 minutes before serving

tips

These can also be used as part of a mixed green salad - simply add to salad greens and carrots peeled into ribbons.

  • I added a little grated ginger (about 1ts) and some shredded Vietnamese mint to this for a bit of a bite - yum.
